I make one of these a couple times a week. I am slightly obsessed with this sweet, tart, and cinnamon-y, warm mug of goodness. Quick, microwave mug recipes are great when you are only making dessert for one or two people. And, since I have this recipe memorized, it is ready in about five minutes. It can be varied by the type of fruit and amount depending on the size of your mug. My favorite combination is blackberry, raspberry, and blueberry...and I have a pretty big mug.
Ingredients:
Fruit Mixture:
1 1/2 cup frozen fruit
1 tsp lemon juice
1 tsp vanilla
1 tbsp sugar
1 tbsp flour
1/2 tsp cinnamon
Crisp Topping:
1/3 cup quick oats
1 tbsp flour
1 tbsp brown sugar
1/2 tsp cinnamon
1 1/2 tbsp coconut oil (melted)
In a small bowl combine the fruit mixture, pour into your mug and microwave for for 1 minute. While the fruit is warming up, use the same bowl to mix the crisp topping. Add it to the top of the fruit and microwave for 2 more minutes. That's it!
