Looking for a great soup recipe? This is it. Italian Wedding Soup is one of my favorite types of soup ever. I have made it a few different ways over the years but I like this recipe the best. The meatballs are scrumptious. It is perfect to cozy up with on a crisp fall day.
Ingredients:
Soup:
4 cups chicken broth
4 cups water
1 tsp Italian Seasoning
1 tsp basil
1 clove garlic
1 can carrots (or a couple fresh, sliced up)
1 medium zucchini, diced
1/2 cup spinach, chopped
1 box pearl couscous (or a small pasta, like Ditalini)
Meatballs:
1 lb turkey sausage
1/3 cup Italian bread crumbs
1/3 cup grated parmesan
1 tsp basil
1/2 tsp garlic powder
Combine meatball ingredients and form into 1 inch meatballs. Grill in a large soup pot with a little bit of olive oil until nearly cooked through. Saute garlic until fragrant in the same pan. Add soup ingredients except couscous and spinach. Bring to a boil. Add couscous and boil for 10 minutes. Add spinach in the last two minutes. Serve up in a nice, big bowl and enjoy!
