Merry Christmas! We made the cookies first as something fun to do with the kids. We did not expect them to be that great. I mean, 3 kinds of chocolate sounds a little overwhelming and way too sweet. They have now turned into our favorite cookies and we have made them several times in the past few weeks. They are actually not too sweet, the different types of chocolate, salt, and peppermint really balance out and to make the dreamiest Christmas cookies.
Ingredients:
1 cup sugar
1 cup brown sugar
1 stick (1/2 cup) butter, softened
1/2 cup coconut oil
2 eggs
1 tsp vanilla
1 tsp baking soda
1 tsp baking powder
1 tsp salt
3/4 cup baking cocoa
2 cups flour
semi-sweet chocolate chips
Topping:
dark chocolate baking chips/chunks
peppermint essential oil (or extract)
crushed peppermints (or candy canes)
Directions:
Preheat oven to 350 degrees. Cream butter, oil, and sugars together. Beat in eggs and vanilla. In a separate bowl, mix dry ingredients. Slowly mix dry ingredients into wet. Mix in chocolate chips, about 3/4 of the bag. Chill dough for 15 minutes. Scoop a rounded tablespoon of dough (makes 2 dozen) and place on a greased baking sheet. Bake for 13 minutes. Let cool. Melt dark chocolate per package instructions and add 1 drop peppermint essential oil*. Drizzle melted chocolate on cookies and dust with crushed peppermint.
